1 dozen blue crab,clean and cut to 1/2 each 1/2 cup self raising flour 1/4 cup corn flour 1 tbsp salt 1 tbsp ground white pepper *combine all dry ingredients together in a large container* ---------------------------------------------------- 1 tbsp sugar+1 tbsp seasalt+1 tbsp ground white pepper 1 stalk scallion,washed and cut 2 inch each 1 red whole red pepper,washed and sliced 2 cups cooking oil Method: 1:Heat fryer or large skillet or wok with oil at medium high heat..Coat cut clean crab with flour mixture,shake the excess flour,then place in hot oil to fry till lightly brown or 1 minutes each side.Repeat to cook all the crabs till done.Dish cooked crabs out and set aside. 2:Remove oil from skillet ,reduced heat to medium ,use the same skillet,pour back the cooked crab into the skillet,then immediately sprinkle salt and pepper mixture all over the crabs,toss crabs in the skillet and keep tossing crabs for 3 minutes till all the seasoning well combine wt cooked crabs to form a crunchy and tasty coating.Check the seasoning. 3:Add in cut scallion and sliced whole red pepper into the crabs,toss few times before dish out and serve warm and snack or meal.
